Mile High Strawberry Pie

Pastry

1 1/2 cups flour

1 tsp. salt

2 tbsp. milk

1/4 cup vegetable oil

Filling

1 1/4 - 1 1/2 cups berries (10 oz fresh or frozen package)

2 egg white

pinch salt

1 cup whipping cream, whipped

1 cup sugar

1 tbsp lemon juice

  1. Combine flour, salt, and sugar. Add oil and milk.  Press to form a crust in a 9-inch pie pan.  Flute edges and prick shell generously.  Bake at 425 degrees for 15 to 20 minutes. Cool.

  2. Beat egg whites until soft peaks form.  Add berries, sugar, lemon juice and salt.  Beat at high speed in the largest mixing bowl for 15 minutes.  Do NOT under beat.  Fold in whipped cream. 

  3. Spoon into cooled pie shell.  Place in the freezer and serve frozen.  Cover the pie with foil once it is set. Will keep in the freezer for several days.
